Cornbread Stuffing

½ cup            Celery

1                      Medium onion

1 Tbsp           Butter

3 cups             gfGoodies cornbread recipe, cubed

1                       Egg, beaten

1-1/2 cup      Stock

2 Tbsp            Sage

Salt and pepper to taste

Preheat oven to 350 degrees.  Grease one 9” x 13” inch baking dish. Melt butter in a skillet, add onions and celery and cook until soft.  In a large bowl combine onions, celery, egg, stock, cornbread, sage, salt and pepper.  The cornbread will be crumbly and that is fine. Pour into prepared baking dish.  Bake 30-45 minutes depending on desired crispness.
